ROASTED BEETROOT SALLAD

Värm ugnen till 200 grader, skala och skiva rödbetorna, salta, peppra och droppa olivolja över, kör in dom i mitten av ugnen i 10 minuter varmluft, släng in broccoli och purjolök (purjon är god att ha rå också) samma form och låt stå i ugnen i ytterligare 20 minuter varmluft. Sen hade jag tänkt slänga in lite valnötter dom sista 5 minuterna men jag glömde dom helt haha. Hosta upp ruccola, sockerärtor, avocado, tomater, whatever you want, blanda ihop med rödbetorna och broccolin och smula över fetaost. Ha nån dressing om du vill, själv valde jag italiensk dressing. Klart! Enkelt och mumsigt!
Preheat the oven to 200 degrees celsius (392 F), peel and slice the beetroots, add salt and pepper, drip some olive oil over, pop them in the middle of the oven for 10 minutes on hot air, add broccoli and leek (the leek is tasty raw as well) in the same pot and let it stay in the oven for another 20 minutes on hot air. Then I had thought to add walnuts the last 5 minutes men I totally forgot about them haha. Take some ruccola, arugula, sugar snaps, tomatoes, whatever you want, mix them together with the beetroots and broccoli and sprinkle over feta cheese. Have a dressing if you want, I chose italian dressing. Done! Simple and yummy!

I tried this yesterday, but instead of broccoli I used couliflower and omg it was soooooo good! Thank you! I hope you’re gonna add more recipes from time to time. 🙂
